Gastronorm System:
what it is and why it is essential in professional catering
In a professional kitchen, every centimeter counts.
Every movement must be seamless.
Every element needs to work in harmony.
That’s why, when we design kitchens, workstations, or custom solutions for the Ho.Re.Ca. sector, we start from a fundamental principle: organization must be smart, and this is where the Gastronorm system comes into play, an international standard that makes every space more functional, every preparation safer, and every service more professional.
What the Gastronorm system is
The Gastronorm system (GN) defines the standard sizes of containers used in professional catering, ensuring modularity and compatibility with ovens, refrigerators, buffet counters, service trolleys, and work surfaces.
Thanks to this standardization, every operation in the kitchen becomes more efficient, safe, and organized. The main unit of measurement is the Gastronorm GN 1/1, which measures 530 x 325 mm. All other sizes are based on this standard, maintaining modular proportions that can be easily combined.
The most commonly used sizes and their everyday applications
- GN 1/1 (530 x 325 mm) – Perfect for large quantities of food, ideal for preparation and storage in ovens and refrigerated counters.
- GN 1/2 (325 x 265 mm) – Often used in buffets and self-service setups, it allows efficient space division without compromising capacity.
- GN 1/3 (325 x 176 mm) – Ideal for sauces, side dishes, or specific ingredients. Its compact size allows for detailed preparation and attractive presentation.
- GN 1/4 (265 x 162 mm) – A versatile size for small portions or individual ingredients, helping to reduce waste and prevent unwanted mixing.
- GN 1/6 (176 x 162 mm) – Perfect for spices, condiments, and small portions, also useful for dedicated workstations.
- GN 1/9 (108 x 176 mm) – Ideal size for garnishes and very small quantities of ingredients.
- GN 2/3 (354 x 325 mm) – A versatile intermediate size, often combined with others to meet different operational needs.
Why the Gastronorm system truly makes a difference in service
Food safety and hygiene
In the professional sector, hygiene is a top priority.
Stainless steel GN containers offer:
- smooth, easy-to-clean surfaces
- corrosion resistance
- compatibility with frequent high-temperature washing
This reduces the risk of contamination and supports compliance with HACCP procedures, which is essential in hotels, catering, and on ships.
Space optimization
Every centimeter in the kitchen is valuable. GN modularity allows you to make the most of:
- refrigerated compartments
- work surfaces
- shelving
- service trolleys
When the Gastronorm system is taken into account from the design stage, the space is organized in a logical and functional way, avoiding waste and improvised solutions. The result is a more orderly, efficient, and easy-to-manage work environment.
Materials and durability
GN containers can be made from various materials, but stainless steel is the most widely used in professional kitchens due to its:
- strength and durability
- hygienic properties and ease of maintenance
- resistance to impacts and high temperatures
It is the same material used in our kitchens, trolleys, and technical structures: in daily operations, quality is not optional, but a necessity.
A standard that becomes a competitive advantage
Understanding and applying the Gastronorm system means:
- designing the kitchen more effectively
- working with order and precision
- ensuring food safety
- increasing team efficiency
When this approach is integrated from the design stage — as is the case in our solutions for hotels, restaurants, and international establishments — the difference becomes noticeable: smoother operations, more professional service, and consistent quality, without visible chaos, but with rhythm and precision.
